This amazing Washed Colombia surprised all of us when we cupped. Medium to high acidity. Fruity, sweet and delicate. This is that type of coffee that nobody will believe you when you tell them its a decaf.

The sugarcane process uses ethyl acetate (EA), a natural compound derived from cane sugar, to decaffeinate coffee. EA binds to chlorogenic acids in caffeine, initiating the separation of caffeine from the coffee bean. The process involves steaming the green coffee beans to open their pores, submerging them in the EA solution, and repeating the process until sufficient decaffeination occurs. The beans are then steamed again to remove any traces of EA. After drying and polishing, the decaf coffee is packaged and distributed.
