El Paraiso farm is located in the department Planadas, in the southern part of the Tolima region, deep in the foothills of the Central mountain range of Colombian Andes. To get to the farm, reserve minimum two hours of ride on the steep side of the mountain range and wish for clean and dry roads but the end of the rally trip rewards you with spectacular views and the disarming smile of Yannid Díaz, the owner of this magical place.
Yannid is a member and proud ambassador of El Brasil project since its introduction seven years back. The project that InConexus started in the south of Tolima. In the last few years, he invested a lot of energy and experiment under the guidelines of InConexus on exotic varieties, as Gesha, and also different fermentation processes. The coffee from his hand is always full of juicy fruity notes with deep sweetness and long after-taste. He is proud of his coffee, and he has reason to be J He considers El Paraiso as a blessed place for him and his family and people he loves. And he adds with smile “this is a place that brings me a lot of work but also beautiful experiences, and opportunities to live a better life.”
The harvest of the coffee was done in a very selective manner; only ripped cherries were collected. Coffee was then selected by density and kept in tank, still in cherries, for 24 hours. Then the coffee was de-pulped and fermented in the tanks for 55 hours. After the coffee beans were washed and put on the ventilated roofs, where were dried carefully for 16 to 21 days, depending on the weather conditions, and regularly turned. All the process is monitored and controlled, to be in the position to replicate in the future.
